Easter Eggs

Whether you celebrate Easter or not, eggs are certainly one of my favorite parts of spring. I've been trying a few new recipes ever since I discovered a new source of free range organic farm fresh eggs. (the best!!!!) This method is so easy, and tasty, you are just still not to try it.

Baked Avocado Eggs
-set oven to 425
-halve an avocado and remove seed
-spoon out enough avocado insides so that
the egg will fill the cavity
(I recommend two spoonfuls) 
-crack one egg into each avocado well
-set on baking sheet or pan and bake
for 15-20 minutes

Enjoy with salsa!!!~

It had just began to feel like spring when the weather took an ugly turn.
I choose a very rainy day to wear moccasins, but luckily I kept my dress casual enough that it didn't matter too much. I kept cozy in my hoodie, tea in hand, while I labeled LP's all day.~

Yesterday I had to step away from a job and a family of co-workers I loved.
The JAC had become a second home to me, but I am excited to enjoy it was a customer again.
I grabbed a drink after my final shift and mulled over all of the memories I had made while there.
The newly found free time is also a breathe of fresh air.~

Sometimes, I swear the kind of work Dave takes on with his art is the work of a madman.

I've been making progress on putting together a guest list and a budget for the wedding.
I find myself discouraged by finances, but I understand that I am not alone with this problem at this age in my life. Somehow, there is a sense of unity in the cheapskate rituals me and my friends find ourselves performing.

April fool for you

Andy and I are two fools who fell in love and have been together a grand total of four years today. We celebrated by starting the day with a hearty breakfast, listening to a table of ornery elders cackle away about their day. We wore a smile the entire time.
I cannot image life without him. I can always count on him making be laugh every single day.
 I look forward to it all.~
